Ingredients
- 1 1/2 tbsp. sesame oil
- 1 organic egg, lightly scrambled
- ½ onion, diced
- 1 carrot, diced
- 2 c. cooked rice
- 1 ½ tbsp. tamari
- 1 tbsp. mirin or white cooking wine
- ½ c. peas
- Fresh parsley for garnish
Heat frying pan and add ½ tablespoon of the sesame oil. Pour egg into pan and cook without stirring until done (flip half way through) Remove egg from pan and set aside Heat remaining sesame oil in pan, add onions and carrots and sauté slightly, then add cooked rice. Let sit until rice begins to get crusty, then flip. When rice is hot on other side, add tamari and mirin and stir. Dice egg and add back to rice. Stir, heating until warmed through. Garnish with parsley.
