For the meatballs:
- ½ pound lean ground turkey
- ½ small onion, diced
- ¼ c. gluten-free bread crumbs
- 1 egg
- 1 tsp. dried oregano
- Pinch sea salt
For the sauce:
- 1 tbsp. olive oil
- ½ small onion, diced
- 1 can (28 ounces) tomato sauce or crushed tomatoes
- 2 tbsp. fresh basil, chopped
- Pinch sea salt
To prepare meatballs: Combine all ingredients in a medium bowl, form into any size meatballs. Set aside.
To prepare the sauce: Heat the olive oil in a large sauté pan. Add the onion and sauté until it begins to brown. Add the meatballs and allow to brown, turning occasionally. Add the tomato sauce or crushed tomatoes, fresh basil, and salt and simmer for 15 minutes, until the meatballs are cooked through. Serve over rice.
