Ingredients
- 1 tbsp. olive oil
- ½ small onion, diced
- ½ green pepper, diced
- 1 tbsp. garlic, chopped
- 2 tsp. chili powder
- 2 tsp. cumin
- ½ tsp. thyme
- 1 tbsp. tomato paste
- 2 c. tomato puree
- 2 tbsp. stone ground mustard
- 2 tbsp. black strap molasses
- ¼ tsp. salt
- Pinch black pepper
- 1 package (10 ounces) tempeh, crumbled
Heat olive oil in a saucepan. Add the onions, peppers, and garlic and cook until they begin to soften. Add the spices, tomato paste, and sauté a few more minutes. Then add the tomato puree, mustard, and molasses, salt and pepper and simmer for 5 minutes. Add the tempeh and continue to simmer for another 10 minutes.
